Turn it into a cozy rice porridge or warm lentil salad, or top it with a tasty all-purpose garnish.
One of my favorite ways to dress a vegetable is: fry mustard seeds and curry leaves, add ground coconut, garlic crushed and dried red peppers in the pan, and let it toast very lightly. That's it. This crumbly, sweet and salty filling is quick to prepare andgoes well with almost any vegetable.
I learned the basic recipe of this massolu of my aunts in Pune, India, and love it on sauteed shredded cabbage, wilted greens, or halved roasted Brussels sprouts. It 's good on grilled mushrooms that are still juicy or with boiled new potatoes and fresh blanched peas.
But this week it ' s is winter squash season! I see striped delicata and acorn squash at the market, and found some nice honey walnuts from Weiser Family Farms in Tehachapi, Calif. as floral as ripe melon when I opened thems. I roasted them and sprinkled them over this all-purpose mix.
Roasting a big batch of squash for the week is a great move, and doing it strategically can get you at least two more completely different meals. Roasted squash puree with brown butter to incorporate into the cooked rice for the rice porridge - I fell in love with this dish at his old Los Angeles restaurant Porridge + Puffs. Then dress the rest of your batch with pomegranate molasses and honey to make the roasted squash salad , or try the version with red wine vinegar and goat cheese dressing (leave the cheese to make it vegan). What to do with roasted veggies topped with this crispy crunchy coconut filling? Top it over rice. Stir it into a frittata mixture. Serve it with it dal and some yogurt on the side. Cut a thick slice of bread, spread a generous amount of cashew butter on it and cover with roasted squash. Then fry an egg, slide it over top and season with a little salt and flaked pepper.
