How is the environmental impact calculated?
Joseph Poore, researcher at the University of Oxford, and Thomas Nemecek from the Agro-Ec Research Divisionological and environmental in Zurich, Switzerland, examined the environmental impact of 40 major food products that make up the vast majority of what is consumed globally.
They assessed the effect of these foods on greenhouse gas emissions and the amount of soil and freshwater used at all stages of their production, including processing, packaging and transport, but excluding the cooking process.
